Kadhi Pakora – Khatti, Masaledar Aur Dil Ko Chhoo Jaane Wali!
Assalamualaikum khaas khaane ke shaukeen doston!
Yeh kadhi na zyada patli, na zyada gaadhi — bilkul raspy texture wali, jisme har chammach mein ho dahi ki tang aur masalon ka thumka! 😋
🛒 Zaroori Cheezein:
👩🍳 Kadhi ke liye:

Dahi – 1 cup (khatti wali, achhi phenti hui)

Besan – 4 tbsp
-
Haldi – ½ tsp
-
Lal mirch – ½ tsp
-
Namak – swaad anusar
-
Pani – 3 to 4 cups
-
Curry patta – 5-6 patte (optional)

Adrak lehsan paste – 1 tsp
-
Zeera – ½ tsp
-
Methi dana – ¼ tsp
-
Sabut lal mirch – 2
-
Oil – 2-3 tbsp
🧆 Pakoray ke liye:
-
Besan – ½ cup
-
Pyaz – 1 (bareek kati hui)
-
Hara dhania – 1 tbsp
-
Hari mirch – 1 (optional)
-
Ajwain – ¼ tsp
-
Namak – swaad anusar
-
Thoda pani – batter banane ke liye
-
Baking soda – ek chhutki (fluffy pakoray ke liye)

Tel – talne ke liye
🔥 Tayari Ka Tareeqa:
Step 1: Pakoray bana lo

Besan mein pyaz, hara dhania, hari mirch, ajwain, namak aur soda daal kar halka sa thick batter banao.

Garam tel mein chhoti chhoti pakoriyaan daal kar golden brown hone tak tal lo.
-
Tissue paper par nikaal lo aur side rakh do.
Step 2: Kadhi banayein

Ek bowl mein dahi + besan + haldi + lal mirch + namak daal kar achhi tarah whisk karo. Phir usmein 3-4 cup pani milao.

Kadhai mein oil garam karo, zeera, methi dana, curry patta, lal mirch, adrak lehsan paste daal kar tadka lagao.

Phir dahi-besan ka mixture daal do, aur constantly chammach chalaate hue ubalne do.

15-20 min tak medium flame par pakao jab tak kadhi thodi thik ho jaaye aur raspy texture le le.
Step 3: Pakoray milaao

Jab kadhi ache se pak jaaye to gas slow karo aur pakoray daal do.
-
5-7 min tak aur pakao taake pakoray gravy mein naram ho jaayein.
🌿 Garnish & Serve:
Halka sa garam masala upar se chhidak do. Serve karo garam roti, chawal ya jeera rice ke saath. Thoda sa hara dhania bhi daal do upar se – maza dugna ho jaayega! 😍
